Full-Time Chef de Cuisine

Long established Portland restaurant is undergoing a change and looking for a BOH leader to take us to the next level.
Seeking a hardworking, passionate, and professional Chef de Cuisine to lead all BOH operations; from managing relationships with purveyors, to maintaining an immaculate kitchen, to hiring and training all culinary staff.
This is an exciting opportunity to put your mark on the continually growing Maine food scene. Ideal candidate will be an impeccable problem solver who is not afraid to get their hands dirty and lead by example while putting out consistently amazing food.
Responsibilities to include but not limited to:
Create and follow detailed, efficient BOH procedures for all BOH staff.
Establish and manage positive relationships with local purveyors; order ingredients, supplies and schedule deliveries.
Food costing expertise: maintain a tight food cost staying under budget while maintaining excellence.
Maintaining ALL sanitation rules and regulations.
Maintain detailed and accurate kitchen inventory.
Create and implement new menu items and nightly specials
Strict quality control; need to touch every plate as it leaves the kitchen not settling for anything less than perfect.
Demonstrated ability to effectively lead and manage a team of full and part time staff. –
Strong organizational skills with attention to detail
Ability to teach others with patience
A sense of humor.
